Les Tamales Every day is bargain day, with $4 knocked off the price of all entr饳 in celebration of the Franco-Mexican restaurant's fourth anniversary. Try the grilled spice-rubbed flank steak with jalape�ashed potatoes ($13) or the spice-seared mango-marinated pork chops ($12). IN THE GLASS There's a red for every pocketbook among the Stimson-Lane spring releases: Chⴥau Ste. Michelle '99 reserve merlot (with a 16 percent dash of cab franc for zing) hovers around the top end at $37, while the Columbia Crest cabernet sauvignon of the same year is something of a steal at $11. Both in stores now. AT THE MARKET Copper River king salmon goes on sale this week: Nothing else matters. You might want to wait a few days until the price drops to the merely stratospheric and pass the interval planning all the ways you're going to cook it. Grilled with dill, poached with b顲naise sauce (fresh tarragon's in season), baked with fennel. . . . The only rule is: Keep it simple. This fish is too good to warrant fussy preparation.
